Will it be possible for me to play an NTSC PS2 game through a HDMI cable on my PS3?
Yeah from what I've read since the PS3 is region-free. You'll only experience problems if you don't have a HDTV, or thats what I read. But you do have a HDTV so you should be fine.

Afaik yes. You'll still need PAL PS/PS2 games for your PS3. It'd be really odd if PS3 broke region coding on region coded products.
